Home-made Yule Chai Tea

Finally the cold weather has arrived and the cold blue mornings reveal a sparkle of frost on the ground. This is the best time of year to brew some indian Chai tea, spicy, aromatic and warming it will make your home smell festive and exotic and from the inside will cleanse your digestive system. This recipe makes 4 cups and you will need;

  • 1 cup of milk (or coconut milk)
  • 1 cinnamon stick
  • 6 whole cardamom pods, lightly crushed
  • 6 whole cloves
  • 1 inch piece of fresh ginger, peeled and sliced thinly
  • 1 teaspoon whole black peppercorns – you can also use pink peppercorns
  • 2 single-serve black tea bags or 1 tablespoon loose black tea – Darjeeling works well
  • 2 tablespoons dark brown sugar
  • 1 sprig of fresh mint (optional) – I like the extra freshness and still have this growing fresh in my garden

Add 3 cups/mugs of water, peppercorns, cloves, ginger, cardamon and cinnamon to a small pan and bring to the boil. Cover then pan and allow to simmer for 5 minutes, then take off the heat and steep the tea for 10 minutes. Then return to the heat and bring to the boil, take off the heat again and add the black tea of your choice – allow to steep again for 5 minutes – if you are adding fresh mint pop it in now. Then strain the whole lot through a sieve return to the pan over a low heat and gently stir in the sugar and the milk to taste – then pour into cups and serve. This is guaranteed to warm you up and get you feeling festive.
